white cheese of Cyprus which has been produced by the Island
for centuries.
It is a semi-hard cheese prepared from sheep’s, cow’s or goat’s
milk and rolled in wild mint. And, it lays claim to being the
world’s most fascinating cheese.
It has a distinct and pleasant flavour and a soft springy texture
that makes it versatile to cook. You can grill it, you can
grate it, you can fry it, have it with pasta, in a salad with
Greek dressing, on a kebab, with ham or fried eggs or you can
simply enjoy it as it comes.
Halloumi is a cheese of almost endless variety. Yet whatever
